About this wine
This vintage of Sauvignon Blanc was handpicked on September 18, 2023. With the vineyard team rigorously sorting the grapes as they picked. These grapes were hand sorted for a second time by our winemaking team. With a focus on cleanliness and quality. They were then gently whole cluster pressed in order to maintain acidity and freshness in the wine. This wine was then moved to stainless steel where it was fermented using natural yeast. This wine fermented at cold temperatures to create a long slow fermentation of four months. This was done to preserve thiols and tropical fruit aromatics. This wine was aged sur lie for seven months until bottled in the spring of 2024.
Suggested Food Pairings
Steamed white fish, oysters, salads featuring goat cheese, and steamed clams.

Vintage Notes
2023 started two weeks early in comparison to other vintages, a warm stretch through March allowed the vines to wake up and undergo budbreak earlier than expected. This vintage is defined by two things the diurnal shifts and the near drought like conditions. Diurnal shifts are the warm day time temperatures coupled with the cool night time temperatures. The second were the drought conditions, record low rainfall lead to smaller berries and increased concentration in the wines. This created an environment that is conducive to great ripeness and great acidity in the wines. The reds are bright, fruity, and structured, and the whites are elegant and crisp. An exciting vintage that will produce wines with great age-ability.
Vineyard & Soil
This vineyard was planted in 2003, midway up the slopes of Sawmill Creek Vineyard. This site is in the sweet spot of the vineyard. This provides a blanket of warmer air from Seneca Lake in the winter. In the summer the cooling effect of the lake is diminished, providing a warm spot in the vineyard. This placement creates a warmer microclimate than the surrounding vineyards. This block is planted on Lansing Gravelly silt loam, sitting on a mixed bed of shale and limestone. The combination of vineyard location and soil composition leads to a microclimate that creates an aromatic, plush representation of Sauvignon Blanc.
