About this wine
SMC is our flagship release under our new label. This wine and label are designed to be a reflection of our historic vineyard, Sawmill Creek. The winemaking team took the best two barrels of Merlot and Syrah, as well as our favorite barrel of Cabernet Franc. These wines were selected and they were aged for an additional year in exclusively French Oak. Battonage was used on a biweekly basis through the aging process. This was done to alter the mouthfeel and provide a more luxurious texture. It was eventually bottled in the early summer of 2023 and was allowed to rest in bottle for a year before its release in 2024.
Suggested Food Pairings
Grilled and roasted meats, pasta with red sauce, roasted Camembert, duck confit

Vintage Notes
The winter leading into 2021 was mild, leading to reduced bud damage and a large crop. The vintage started with an early budbreak and bloom. The vintage was warm through the summer, leading to an early start of harvest on September 21st. High levels of rain through September and October made for more austere acid driven styles of wine through the vintage. This leads the whites from this vintage to age elegantly for the coming future. The reds are easy drinking, bright, fruit driven wines best enjoyed young.
Vineyard & Soil
Sawmill Creek is one of the iconic vineyards of the Finger Lakes. This Farm was planted in 1852 and has been farmed for 7 Generations by the Hazlitt family. Located right across the street from our tasting room, this 70 acre site highlights the terroir of the finger lakes. The vineyard rocky shale and limestone soils slope towards the lake. The grapes have full exposure to the warm afternoon sun, leading to increased ripeness and varietal typicity.
