About this wine
This fruit was hand harvested on October 17, 2023. The vineyard crew rigorously sorted through the fruit while picking. It was brought into our cellar and carefully sorted for a second time, to highlight the best parts of the 2023 vintage. It was crushed and fermented in a combination of open top bins, and stainless steel tanks. Following a two week high temperature fermentation to maximize color and tannin the wine was racked into French barrels to rest for 18 months. This wine was lightly filtered prior to its bottling in April of 2025

Vintage Notes
Due to the relatively mild winter leading up to the start of the 2023 growing season. This vintage saw unseasonably early budbreak. The growing season started two weeks early in our vineyards. This led to increased chance of ripening, however it opened up the possibility of frost damage. While frost’s hit, the vineyard site was well protected against damage. The remaining fruit saw temperatures in line with the ten year average. A dry September and cooler nights led to ripe wines with a bright acidity and intense fruit flavors.
Vineyard & Soil
This vineyard, planted in 2010, is pressed right against the winemaking facility at Hector Wine Company. It is grown on a combination of Burdett silt loam and Howard Gravelly loam. These soils differ from the traditional soils found in our vineyards. This site is planted 3,000 feet away from Seneca Lake. This distance creates a warmer microclimate in the summer, leading to increased ripeness in our Limburger Planing. The rich deep soils help us to create an authentic style of Limburger with the traditional pepper and earthy notes.
